2019 iMac configuration selection issues

I plan to buy a 27-inch iMac while the new model is on sale. The cpu and graphics card will be the default, and the hard disk will be replaced with a 512SSD. The price difference between the low-end configuration and the high-end configuration is about 2,500. The difference is the cpu and graphics card. So the question is, how big is the performance gap between the two?     I think the main difference lies in the 8G video memory, because the CPU can be disassembled and replaced, and the graphics card is soldered dead... Of course the graphics card can be connected externally.. And why do the new models use the 8th generation in the middle and low configurations, but the motherboards are all Z390?

    CPU and GPU are not bottlenecks. If you care about the price difference, the answer is not worth it. Apple's options have always been that you get what you pay for, and you get what you pay for two cents. Changing the CPU and hard drive requires removing the screen (loss of warranty).
